A great keyboard shortcut is the Spacebar, which will jump between the last two channels when watching live TV.
To find help for Media Center in Windows, first Restore the Media Center window or Alt-Tab out of full screen if you're in it. Get to Windows Explorer, hit F1 or your favorite means of calling up help and search for Media Center. There you'll find some instructions for the thing, including these shortcuts.
